  • Fold the chopped dates into the dough. The dough may get a little sticky, but that is normal.
  • Scoop small portions of the dough onto the baking sheet to form cookies. You can wet your hands a little to make the dough easier to handle.
  • Lightly press the top of each cookie with a fork to give them a decorative pattern.
  • Bake the cookies in the preheated oven for about 12-15 minutes, or until golden brown.

  • 425 g khalas dates, pitted and chopped

  • 250 ml water

  • 2 tbsp lemon juice

  • 2 tbsp date sugar

  • 1/2 tsp baking soda

  • Crisp
  • 175 g oats

  • 150 g all-purpose flour or almond flour

  • 160 g date sugar

  • 1/4 tsp baking powder

  • 170 g butter, softened

  • Preheat the oven to 180°C. Place the rack in the middle position. Line 20-cm square baking dish with a strip of parchment paper.
  • Filling
  • In a pot, bring the dates, water, lemon juice, and date sugar to a boil. Add the baking soda, mix everything well and simmer for 5 minutes until the dates have fallen apart. Let cool.
  • Crisp
  • In a bowl, combine the oats, flour, date sugar, and baking powder. Add the butter and stir to combine.
  • Spread half the crisp in the baking dish and press firmly. Layer with the date mixture. Cover with the remaining crisp and press lightly. Bake for 45 minutes or until the crisp is golden brown. Let cool on a wire rack for 2 hours. Unmold and cut into 16 squares

Ingredients

  • 70g pecans

  • 70g almonds

  • 80g sunflower seeds

  • 9 khalas dates

  • 75g flaxseeds

  • 60g pumpkin seeds

  • 2 teaspoons chia seeds

  • 1 tablespoon hemp seeds

  • 5 tablespoons Tomoor date sweetener

  • 4 tablespoons coconut oil

  • 6 tablespoons almond paste or tahini

  • 1/2 teaspoon sea salt

instructions

  • Grind the almonds and pecans in a food processor until coarsely chopped.
  • Add them to a bowl with the sunflower seeds, flaxseeds, pumpkin seeds, chia seeds, hemp seeds, dates, and salt.
  • In a saucepan, on a low heat, combine the liquid date syrup, almond paste or tahini and coconut oil, cook for 2 minutes until everything is well combined.
  • Add it to the bowl with the dried ingredients.
  • Spread the mixture and press it well.
  • Place in the refrigerator to stiffen. About 1 hour.
