100 grams unsalted butter, at room temperature
100 grams caster sugar
1 large egg
1 teaspoon vanilla extract
200 grams flour
1/2 teaspoon baking powder
A pinch of salt

- Preheat the oven to 180 degrees Celsius. Line a baking sheet with baking paper or lightly grease it.
- In a bowl, beat together the butter and caster sugar until the mixture is light and fluffy.
- Add the egg and vanilla extract to the butter-sugar mixture and beat until everything is well blended.
- In another bowl, mix the flour, baking powder and a pinch of salt.
- Gradually add the flour mixture to the butter-sugar mixture and mix until a dough forms.
- Fold the chopped dates into the dough. The dough may get a little sticky, but that is normal.
- Scoop small portions of the dough onto the baking sheet to form cookies. You can wet your hands a little to make the dough easier to handle.
- Lightly press the top of each cookie with a fork to give them a decorative pattern.
- Bake the cookies in the preheated oven for about 12-15 minutes, or until golden brown.
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
