  • Preheat your oven to 200 degrees Celsius.
  • If you want to make dates with almonds, carefully cut open each date and place an almond in the center of each date.
  • Wrap each of the dates in a piece of thinly sliced breakfast bacon. Make sure the bacon completely covers the date. You can use a toothpick or cocktail stick to hold the bacon in place.
  • Place the dates with bacon on a baking sheet or in a baking dish. Make sure they are not too close together to allow the bacon to bake evenly.

  • In another bowl, mix the flour, baking powder and a pinch of salt.
  • Gradually add the flour mixture to the butter-sugar mixture and mix until a dough forms.
  • Fold the chopped dates into the dough. The dough may get a little sticky, but that is normal.
  • Scoop small portions of the dough onto the baking sheet to form cookies. You can wet your hands a little to make the dough easier to handle.
  • Lightly press the top of each cookie with a fork to give them a decorative pattern.
  • Bake the cookies in the preheated oven for about 12-15 minutes, or until golden brown.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
